2 cloves garlic, minced
1/2 yellow onion, chopped
1/2 cup chopped carrots
2 cups chopped cabbage
3 cups vegetable broth
1 tablespoon tomato paste
1/2 cup green beans
1/2 teaspoon oregano
1/2 teaspoon basil
Salt and black pepper to taste
1/2 cup chopped zucchini
Coat a large stockpot with cooking spray and add the garlic, onion, and carrots. Sauté for 5-7 minutes.
Add the cabbage, vegetable broth, tomato paste, green beans, oregano, basil, salt and pepper to the pot. Bring to a boil, reduce heat, cover, and simmer for approximately 30 minutes until the cabbage is tender.
Add the zucchini and continue simmering 5-10 minutes or until all of the vegetables are tender.
