Ingredients

  • 2 pounds sweet potatoes, peeled and cubed

  • 2 tablespoons orange juice

  • 3/4 cup brown sugar

  • 1/8 teaspoon nutmeg

  • 1/8 teaspoon cinnamon

  • 2 tablespoons butter, cubed

  • 1 cup miniature marshmallows

Directions

  • Set oven temperature to 350°F.

  • In a large pot, cook the sweet potatoes in water with salt for 20 minutes over medium-high heat.

  • Drain the sweet potatoes and then add the orange juice, brown sugar, nutmeg, cinnamon, and butter to the pot. Whip the mixture until it is smooth.

  • Place the mixture into the casserole dish and spread it evenly. Add the marshmallows on top of the sweet potatoes.

  • Bake the casserole for 10 minutes or until the marshmallows are light brown.
