1 large bunch broccoli (approximately 1 ½ pounds)
¼ cup nonfat plain yogurt
¼ cup reduced-fat mayonnaise
3 tablespoons apple cider vinegar
2 teaspoons sugar
½ teaspoon Salt
Freshly ground black pepper
1 can low-sodium sliced water chestnuts, coarsely chopped
½ cup finely diced red onion
Cut the broccoli into small pieces of less than ½ inch.
Combine the yogurt, vinegar, and mayonnaise in a medium sized mixing bowl. Add the sugar, salt, and pepper.
Combine the broccoli, onion, and water chestnuts in a gallon sized plastic freezer bag. Add the dressing to bag and shake until completely coated.
Place the bag in the refrigerator until ready to serve.
