1/4 cup smooth natural peanut butter
1/3 cup orange juice
3 tablespoons reduced-sodium soy sauce
1 tablespoon ricevinegar
2 teaspoons sugar
4 teaspoons canola oil, divided
3 cloves garlic, minced
1 pound sirloin beef steak, trimmed and thinly sliced
1 small head Savoy cabbage, thinly sliced
2-5 tablespoons water
2 medium carrots, grated
In a medium bowl, combine peanut butter, orange juice, soy sauce, vinegar, and sugar, whisking until smooth.
Heat oil in a medium skillet. Cook garlic over medium-high heat for 1 minute. Add steak and cook 2-4 minutes until barely pink in the middle. Transfer meat to a bowl.
Reduce heat and add oil. Cook cabbage in 1-2 tablespoons of water for 3-5 minutes. Stir in carrots and more water if necessary. Cook 3 minutes more until tender. Add steak back into pan, stirring well. Pour peanut sauce on top, tossing well to combine.
