8 ounces ground turkey, extra lean
1/2 cup onion, finely chopped
2 cloves garlic, minced
3/4 teaspoon ground cumin
1/2 teaspoon dark chili powder
1 cup bell pepper (red and green), finely chopped
1/2 cup fat-free salsa verde, fire-roasted
One 11-ounce can pizza dough, refrigerated, thin crust (use whole wheat if possible)
3/4 cup Mexican blend cheese, shredded

1/4 cup fat-free sour cream, if desired
Preheat the oven to 425°F. Adjust the oven rack to the upper third of the oven.
In a large skillet, heat ground turkey over medium-high heat for 5 minutes, stirring to crumble. Add the onion and garlic to skillet, and continue cooking until the onions are tender (about 4-5 minutes). Add the spices, and cook for 1 minute while stirring. Add the peppers, and cook for 1 minute longer. Remove the mixture from the heat, add the salsa, and stir.
After unrolling the dough, divide into four rectangular portions. Place 1/2 cup of turkey-vegetable mixture on half of each portion of the dough, then top with 2 tablespoons of cheese.
Brush the egg mixture onto the border of the dough using a pastry brush. Fold the dough over the turkey-vegetable mixture, and pinch the edges to seal. Bake until golden brown (about 10-12 minutes).
