Donuts
2 cups all-purpose flour
1 1/4 cups sugar
2 teaspoons baking powder
1/4 cup fresh lemon balm, minced
1 cup Greek yogurt
1.4 cup milk
2 eggs
1 teaspoon salt
4 tablespoons butter
Blackberry Glaze
¼ cup cream
6 blackberries, smashed
1 tablespoon corn syrup
1 cup powdered sugar
Preheat an oven to 325°F and lightly coat a donut pan with baking spray.
In a large bowl, mix together the flour, baking powder, sugar, and salt.
Add the lemon balm, yogurt, melted butter, milk and eggs. Combine well until batter is smooth.
Fill the donut pan and bake for 10 minutes.
Remove from the oven and let cool for one minute. Transfer to a cooling rack.
Bake the remaining mixture. When all donuts have cooled, prepare the glaze.
In a large bowl, mix all of the glaze ingredients and whisk until smooth.
Coat all donuts by dipping into glaze. Donuts may require two coats.
Allow glaze to harden. Serve.
