1 cup uncooked white long-grain rice
5 cups water
2 cinnamon sticks
1/2 cup milk
1/2 tablespoon vanilla extract
2/3 cup white sugar
Combine the rice and water in a blender and blend until the rice starts to break up, about 1 minute. Add the 2 cinnamon sticks to the rice water.
Allow the rice water and cinnamon mixture to stand at room temperature for at least three hours.
After the cinnamon has steeped, strain the mixture through a fine sieve or cheesecloth into a large pitcher. Add the milk, vanilla, and sugar and stir well. Chill in and serve over ice.
