Ingredients

  • 2 cup raw zucchini

  • 3/4 cup coconut flour

  • 3/4 cup almond flour

  • 1 teaspoon baking soda

  • 1/3 cup extra virgin coconut oil

  • 1/3 cup honey

  • 2 eggs

  • 1/4 cup unsweetened applesauce

Directions

  • Beat together the coconut oil, honey, eggs, and applesauce.

  • Combine the mixture with the almond flour, coconut flour, salt, and baking soda until well mixed.

  • Shred the zucchini with a cheese grater and add to the mixture.

  • Use coconut oil to grease a loaf pan and pour in mixture.
