2 cup raw zucchini
3/4 cup coconut flour
3/4 cup almond flour
1 teaspoon baking soda
1/3 cup extra virgin coconut oil
1/3 cup honey
2 eggs
1/4 cup unsweetened applesauce
Beat together the coconut oil, honey, eggs, and applesauce.
Combine the mixture with the almond flour, coconut flour, salt, and baking soda until well mixed.
Shred the zucchini with a cheese grater and add to the mixture.
Use coconut oil to grease a loaf pan and pour in mixture.
Bake at 350 degrees F for 40 minutes.
