3 cups white sugar
1 1/2 cups corn syrup
1 pinch salt
2 cups liquid non-fat non-dairy creamer
1/2 teaspoon vanilla extract
1/2 cup walnuts, chopped

Add the sugar, corn syrup, salt, and 1 cup of non-dairy creamer to a heavy saucepan. Heat mixture to 234-240°F or until it becomes a soft ball if a small amount of mixture is dropped into cold water. If the soft ball can be flattened when removed from the water, it is ready.
Adding small portions at a time, mix the vanilla and the remaining creamer into the saucepan until the mixture turns into caramel.
Butter an 8 x 8 inch baking dish. Remove the mixture from heat and pour into the dish. Sprinkle walnuts on top of the caramel.
Set caramel aside until cool, and then cut into pieces to serve.
