1/2 large ripe cantaloupe
3/4 cup red bell pepper, finely diced
1/4 cup cilantro, finely chopped
3 tablespoons scallions, finely chopped
Juice of 1 lime
Pinch of salt and red pepper flakes
Cut off the cantaloupe rind and scoop out the seeds. Finely dice the cantaloupe.
Combine the finely diced cantaloupe, finely diced red bell pepper, finely chopped cilantro, and finally chopped scallions in a large mixing bowl. Add the lime juice, pinch of salt, and pinch of pepper flakes.
