1 stalk celery, diced
2 scallions, diced
1/2 green bell pepper, diced
1 clove garlic, minced
1 carrot, diced
1 potato, diced
3 1/2 tablespoons butter
2 tablespoons porridge oats
3 tablespoons water
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon curry powder
1/8 cup all-purpose flour
1 tablespoon olive oil
Mix the celery, scallions, bell pepper, garlic, carrot, and potato in a medium-sized bowl. Melt the butter in a pan over low heat and add the vegetables, sautéing for 3 minutes.
When softened, add the oats, water, Worcestershire sauce, salt, pepper, and curry powder to the pan, cooking for another 3 minutes. Transfer to a plate to cool.
Divide the mixture into four portions. Add small amounts of flour to each portion and form into burger patties.
Heat the olive oil in a large skillet over medium heat. Fry the patties for about 6 minutes on each side or until brown. When cooked, let the burgers rest on a paper towel.
Serve hot as is, on a salad, or on a burger bun with desired condiments.
