1 cup amaranth
3 cups soy milk
¼ teaspoon ground cinnamon
1 large apple, skin on, cored and diced
½ cup chopped walnuts
Salt to taste
In a medium saucepan, combine the amaranth, soy milk, cinnamon, salt, and apple.
While stirring, bring to a rolling boil.
Cover the saucepan and reduce the heat.
Simmer for 25-30 minutes until the amaranth is soft.
Top with walnuts and serve warm.
