1 1/3 tablespoons orange juice
2/3 tablespoons water
1/2 teaspoon finely grated orange zest
1/4 cup chopped rhubarb
1 1/3 tablespoons honey
8 wonton wrappers
1 teaspoon coarse sugar
1/2 cup 2% Greek-style yogurt
1 tablespoon honey
1/4 cup finely chopped pistachios

Add the orange juice, 1 1/3 tablespoons honey, water, rhubarb, and orange zest to a skillet and cook until the rhubarb is soft. Strain and allow to cool.
Bake the wontons at 375°F by spraying lightly with a cooking spray until done. Lightly dust with coarse sugar and allow to cool.
Gently mix the Greek yogurt, 1 tablespoon honey, and cooked rhubarb. Sandwich 1/4 of the rhubarb between 2 wontons and top with pistachios and honey.
