1/2 cup sugar
1 tablespoon cornstarch
1/8 teaspoon salt
1 cup pineapple juice
2 tablespoons fresh lemon juice
3 large eggs
2 tablespoons butter
In a medium, heavy, saucepan, whisk the sugar, cornstarch, and salt. Stir in the pineapple and lemon juices and the eggs. Over medium heat, heat the mixture to a boil while whisking constantly. Lower the heat, and simmer until thick, stirring constantly, approximately 1 minute.
Remove the sauce from the heat, and add butter. Stir the mixture until the butter melts.
Pour the mixture into a medium bowl and chill in the refrigerator for at least 6 hours, allowing the mixture to thicken.
