1 cup pineapple juice
½ cup brown sugar
1/3 cup light soy sauce
2 pounds chicken breast, strip skewers or tenderloins
In a small saucepan over medium heat, mix the pineapple juice, brown sugar, and soy sauce. Remove from heat just before the mixture comes to a boil.
Add the pineapple marinade to the chicken, marinate in a refrigerator for at least 30 minutes
Preheat a grill to medium heat. Place the chicken lengthwise onto soaked wooden skewers.
Lightly oil the grill. Cook the chicken tenders for 5 minutes per side, or until juices run clear.
