8 ounces orzo pasta
4 cups baby spinach
2 tablespoons dried capers
8 ounces feta cheese
16 ounces grape tomatoes
1/4 teaspoon black pepper
2 tablespoons Parmesan cheese
Cook the pasta.
Mix the spinach, capers, and feta cheese in a large bowl.
Remove 1/4 cup of pasta water after the pasta is cooked and before it is drained and add it to the mix of spinach, capers, and feta cheese. Toss to mix.
Place the tomatoes at the bottom of the pasta strainer.
Strain the pasta over the tomatoes.
Mix the pasta and tomatoes with the spinach, caper, and feta cheese mix.
Season and garnish with black pepper and Parmesan cheese.
