1/2 cup white sugar
1/2 cup brown sugar
2 cups papaya, seeded, peeled, and cubed
1/4 teaspoon allspice
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 large egg, beaten
1 9-inch graham cracker pie crust
Preheat an oven to 350 degrees F.
Add the white and brown sugar together and whisk. Add in the papayas and coat with the sugar.
In a large saucepan, cook the papayas for 10 minutes. Add the cinnamon, nutmeg, and allspice and stir. Simmer for another 10 minutes.
Remove the papayas from heat and allow them to cool to lukewarm. Add the beaten egg and stir until well combined.
Add the papaya mixture to the piecrust and bake for 45 minutes. Allow to cool.
