1 pound chicken breast, chopped
2 tablespoons olive oil
4 cloves garlic, minced
2 tablespoons fish sauce
2 tablespoons oyster sauce
2 tablespoons sugar
1 tablespoon cornstarch
Pinch of black pepper
1/2 cup cashews
1/4 teaspoon red pepper flakes
4 green onions, diced
1/2-1 cup water
In a large bowl, combine the garlic, fish sauce, oyster sauce, sugar, cornstarch, and pepper. Stir well, then coat the chicken breast in this mixture. Marinate in the refrigerator for 30 minutes.
Heat the olive oil in a large pan over medium heat. Sauté the cashews and the red pepper flakes for 3-4 minutes. Remove from heat and set aside.
In the same pan, cook the marinated chicken in water on medium high heat until cooked through.
Stir in the pepper flakes, cashews, and green onions. Cook for a few minutes and serve hot.
