10 large baking potatoes, peeled and cubed
3 tablespoons olive oil, or as needed
1 onion, diced
1 tablespoon ground turmeric
1 tablespoon salt, or to taste
2 teaspoons black pepper
1/2 teaspoon ground cumin
In a large pot, add the potatoes and water to cover the potatoes completely. Bring the pot to a boil using medium-high heat. Cook for 20 minutes or until a potato cube is tender when pierced with a fork.
In the meantime, add 1 tablespoon of olive oil to a skillet and place over medium-high heat. Add onions and sauté for 6 minutes or until light brown and translucent.
After the potatoes are cooked, drain the water. Mash the potatoes using a masher or a fork. Add the onion and stir and mash. Add the turmeric, salt, pepper, and cumin and stir. To make potatoes creamier, add an additional 2 tablespoons of olive oil and stir. If more is desired for a creamier texture, add to taste.
