1 sliced onion
2 cloves minced garlic
2 large peeled and diced carrots
2 large peeled and diced sweet potatoes
15 ounces rinsed/drained canned garbanzo beans
2 pounds boneless, skinless chicken breast, cut into small pieces
½ teaspoon cumin
½ teaspoon turmeric
¼ teaspoon cinnamon
½ teaspoon black pepper
1 teaspoon dried parsley
1 teaspoon salt
14 1/2 ounces canned diced tomatoes
Mix the vegetables, tomatoes, chicken, spices, garlic, and garbanzo beans in slow cooker with a lid. Cook on high heat for 4 hours or until the sweet potatoes are done.
