1 tablespoon butter
1 cup uncooked quinoa
2 cups vegetable broth
2 teaspoons chopped garlic
2 tablespoons chopped fresh parsley
1/2 tablespoon chopped fresh thyme
1/4 teaspoon salt
1 small onion, finely chopped
1 dash fresh lemon juice (optional)
Place the butter in a saucepan and melt it over medium heat. Then, put the quinoa in the saucepan and stir it occasionally. Sauté the quinoa until lightly brown, which should take about 5 minutes.
Add the broth and bring the mixture to a boil. Cover the mixture, and reduce the heat to a simmer. Cook until the quinoa is tender or about 15 minutes.
Place the quinoa in a bowl and mix with garlic, parsley, thyme, salt, and onion. Drizzle with some lemon juice, if desired. Serve immediately.
