1 pound lean ground beef
1 small onion, chopped
3 cloves garlic, minced
1 can diced tomatoes with liquid
1 1/4 cup water
1 cup tomato sauce
1 tablespoon dried parsley flakes
1 teaspoon dried basil leaves
1 teaspoon dried oregano leaves
1 teaspoon salt
2 1/2 cups whole wheat lasagna noodles
1 cup fat-free cottage cheese
1/4 cup fat-free grated Parmesan cheese
Dash of basil and black pepper, optional
1 egg
Shredded fat-free mozzarella cheese, for garnish
Cook the beef, onions, and garlic cloves in a large skillet over medium heat until the beef has browned. Drain.
Add the tomatoes, water, tomato sauce, parsley, basil, oregano, and salt to the skillet, stirring well.
Add the uncooked lasagna noodles and bring to a boil, stirring occasionally. When boiling, reduce the heat, cover, and simmer for about 20 minutes, or until the pasta is tender.
Meanwhile, combine the cottage cheese, Parmesan cheese, and egg. Add a dash of basil and black pepper if desired. Stir this cheese mixture into the pasta. Cover and cook for another 5 minutes.
Sprinkle with mozzarella cheese before serving.
