2 tablespoons cold water
1 tablespoon lime juice
1 ½ teaspoons unflavored gelatin
4 ounces fat free cream cheese, softened
3 containers of light key lime flavored yogurt
½ cup reduced-fat whipped topping, thawed
2 teaspoons grated lime zest
1 reduced-fat graham cracker pie crust
Mix together the cold water and lime juice in a medium saucepan. Sprinkle the gelatin on top of water-lime juice mixture, and let stand for 1 minute.
Over low heat, stir constantly until the gelatin is fully dissolved. Remove from heat and let cool for 2 minutes.
Beat the cream cheese in a medium mixing bowl until smooth. Add the cooled lime mixture as well as the yogurt. Beat until all ingredients are incorporated.
When the filling is well blended, carefully fold in the whipped topping and lime zest and spoon the mixture into the crust. Place the pie into the refrigerator for a minimum 2 hours to set.
