Dry I
1 1/2 cups whole wheat flour
1/4 cup whole cane sugar
1 teaspoon cinnamon
1/2 teaspoon baking soda
1/4 teaspoon salt
Wet
2 tablespoons honey
2 tablespoons molasses
2 tablespoons applesauce, unsweetened
2 tablespoons walnut oil
1 tablespoon almond milk (may substitute with any milk)
1 teaspoon vanilla extract
Dry II
3/4 cup whole wheat flour
Preheat an oven to 350 degrees Fahrenheit.
In a medium-sized bowl, whisk together the first set of dry ingredients. Set aside.
In a small bowl, combine the wet ingredients. Add this to the first dry ingredients, stirring well. Sprinkle in some of the remaining flour and mix with fingers.
Tape a large square of parchment paper onto a kitchen counter.
Sprinkle the last of the flour on the parchment paper and knead the dough, adding more flour if needed. When a ball is formed, let sit for 10 minutes.
Roll the dough using a rolling pin to about 1/8 inch thick, sprinkling with flour as needed.
Line a cookie pan with parchment paper and set aside.
Slice crackers using a pizza cutter and transfer each square onto the prepared pan. Separate the crackers about 2 inches apart.
Poke holes into the crackers using a fork, then bake for 14-16 minutes. Remove the crackers when the edges have browned.
