6 large tomatoes
3 6-oz cans tuna, drained
3 tablespoons capers, chopped
1 cup chopped parsley
Zest from 1 lemon
¼ cup lemon juice
1 tablespoon olive oil
¼ teaspoon black pepper
Remove the stem end from each tomato and scoop out the seeds and pulp.
Add the tuna, capers, parsley, lemon zest and juice, olive oil, and black pepper to a bowl with the tomato insides.
Stir the mixture and spoon it carefully into hollowed out tomatoes.
