3 medium baking potatoes
2 tablespoons lemon juice
2 teaspoons olive oil
1 teaspoon dried oregano
1/4 teaspoon black pepper
1/4 teaspoon salt
2 cloves garlic, minced

Preheat an oven to 400 degrees F.
Wash each potato and leave the skin on.
Cut the potatoes lengthwise in half, then cut those halves in half, and cut in half once more to get 8 wedges per potato.
Mix the lemon juice, olive oil, oregano, pepper, salt, and garlic in a bowl.
Add the potatoes to the mixture and toss with hands to coat.
Coat a cooking sheet with cooking spray and arrange the potatoes skin side down.
Bake for 45 minutes, or until the potatoes are soft and lightly browned.
