Ingredients

  • ¼ cup onion, minced

  • 3 egg whites

  • ½ cup baby spinach leaves, chopped

  • 2 medium tomatoes, chopped

  • ¼ cup crumbled feta cheese

  • Salt to taste

  • Black pepper to taste

Directions

  • Spray a medium pan with oil over medium heat.

  • Sauté the onions for about 5 minutes.

  • Lower the temperature and add the egg whites, tomatoes, spinach, and half of the feta cheese. Cook for 2-3 minutes.

  • Remove from heat and sprinkle the remaining feta cheese on top as well as salt and pepper to taste.
