Ingredients

  • 1 bunch mint, about 1.5 ounces

  • 2 cups low-calorie sweetener

  • 4 cups water

  • 1 (8-ounce) glass of ice

  • 2 limes, cut into 1/8 sections

  • 1 teaspoon rum extract

  • 4 ounces sparkling water

Directions

  • Wash the mint and place in a saucepan, with no heat.

  • Add the water and low-calorie sweetener and allow to sit for about 15 minutes.

  • Turn on the heat and bring water to boil.

  • After a boil is achieved, reduce the heat to a simmer, cover, and let sit for about 15 more minutes.

  • Drain the sweet-mint water through a sieve, removing any mint particles. This is the mint julep extract.

  • Fill a large glass half-way with ice and 4 of the lime wedges (squeezed if desired). Pour in 2 shots of the mint julep extract and 1/2 teaspoon of rum extract.

  • Top off the glass with sparkling water. Serve immediately.
