1 bunch mint, about 1.5 ounces
2 cups low-calorie sweetener
4 cups water
1 (8-ounce) glass of ice
2 limes, cut into 1/8 sections
1 teaspoon rum extract
4 ounces sparkling water
Wash the mint and place in a saucepan, with no heat.
Add the water and low-calorie sweetener and allow to sit for about 15 minutes.
Turn on the heat and bring water to boil.
After a boil is achieved, reduce the heat to a simmer, cover, and let sit for about 15 more minutes.
Drain the sweet-mint water through a sieve, removing any mint particles. This is the mint julep extract.
Fill a large glass half-way with ice and 4 of the lime wedges (squeezed if desired). Pour in 2 shots of the mint julep extract and 1/2 teaspoon of rum extract.
Top off the glass with sparkling water. Serve immediately.
