1 (15 ounce) can black beans, drained and rinsed
4 large eggs
1/2 cup granulated artificial sweetener
3 tablespoons cocoa powder
2 tablespoons strong coffee
1 teaspoon baking powder
2 tablespoons olive oil
1 teaspoon vanilla extract
Cooking spray
Set oven temperature to 350°F.
Using cooking spray, coat an 8X8 baking pan.
Add all ingredients into a food processor except for the beans and blend.
Add the beans and blend thoroughly. Pour brownie batter into the baking pan and bake for 30 minutes or until an inserted toothpick comes out clean.
Let the brownies cool before cutting.
