Ingredients

  • 5 cups apple, cored, peeled, and chopped

  • 1 cup sugar

  • 1 cup dark raisins

  • ½ cup pecans, chopped

  • ¼ cup canola oil

  • 2 teaspoons vanilla extract

  • 1 egg

  • 2 ½ cups flour

  • 1 ½ teaspoons baking soda

  • 2 teaspoons ground cinnamon

Directions

  • Set an oven to 350°F and spread a light layer of oil into a 13x9 inch pan.

  • Mix the apples, sugar, raisins, and pecans in a large bowl. Set aside for 30 minutes.

  • Beat the egg and add it to the same bowl. Add the oil and vanilla.

  • Sift the flour, baking soda, and cinnamon, and add 1/3 of this mixture to the bowl. Keep adding until the dry ingredients are moistened.

  • Spread the batter in the oiled pan and bake for 35-40 minutes.
