5 cups apple, cored, peeled, and chopped
1 cup sugar
1 cup dark raisins
½ cup pecans, chopped
¼ cup canola oil
2 teaspoons vanilla extract
1 egg
2 ½ cups flour
1 ½ teaspoons baking soda
2 teaspoons ground cinnamon
Set an oven to 350°F and spread a light layer of oil into a 13x9 inch pan.
Mix the apples, sugar, raisins, and pecans in a large bowl. Set aside for 30 minutes.
Beat the egg and add it to the same bowl. Add the oil and vanilla.
Sift the flour, baking soda, and cinnamon, and add 1/3 of this mixture to the bowl. Keep adding until the dry ingredients are moistened.
Spread the batter in the oiled pan and bake for 35-40 minutes.
