1/3 cup shortening
2/3 cup sugar
1 3/4 cup sifted flour
2 teaspoon baking powder
1/4 teaspoon baking soda
1 cup mashed ripe bananas (2 large or 3 small)
Grease a loaf pan and set an oven to 350 degrees F.
Thoroughly mix shortening and sugar.
In another bowl, blend the flour, baking powder, and baking soda.
Combine the dry ingredients into the shortening and sugar mixture, taking turns with mixing in the mashed bananas.
Stir until uniformly combined and pour into the loaf pan.
Bake for 50-60 minutes. Place on wire rack for 10-15 minutes then remove the bread from pan.
