3 asparagus spears
8 ounces crab meat, any shells or cartilage removed
1/3 cup celery, finely chopped
1/4 cup red bell pepper, finely chopped
1 scallion, finely chopped
4 teaspoons lemon juice
1 tablespoon low-fat mayonnaise
1/4 teaspoon seafood seasoning
2-5 dashes hot sauce
Freshly ground black pepper, to taste
4 whole-wheat English muffins, split and toasted
1/2 cup shredded Swiss cheese
Move the oven rack in the upper third of the oven and preheat the broiler.
Add the asparagus to a microwave-safe bowl with 1 teaspoon of water. Cover and microwave for about 30 seconds. Add the celery, bell pepper, crab, scallion, lemon juice, mayonnaise, Old Bay seasoning, hot sauce, and pepper. Stir together.
Place the English muffin halves with the cut side up on a baking sheet. Spread 1/4 cup of the crab salad on each muffin half. Top each half with 1 tablespoon of cheese. Broil for about 3-6 minutes, until the cheese is melted.
