2 large eggs
4 ounces cream cheese
½ teaspoon cinnamon, ground
1 tablespoon flaxseed meal
Artificial sweetener, to taste
Separate the egg whites and egg yolks and beat the egg whites in a separate bowl to soft peaks.
Put the cream cheese in another bowl and beat until smooth. Beat the egg yolks and add into the cream cheese with the cinnamon, flaxseed meal, and sweetener and mix to desired consistency. Fold the whipped egg whites into the mixture.
Pour ¼ cup of batter onto frying pan at medium-low heat and cook until golden brown, approximately 2-3 minutes on each side.
