1 pound mushrooms, sliced
1 onion, chopped
1 head of cauliflower, chopped
3 cups cooked brown rice
2 1/2 cups cheddar cheese, shredded
2 tablespoons butter
1 lemon, juiced
3 cloves garlic, crushed
1 teaspoon basil

Preheat an oven to 350 degrees F.
Heat the butter and lemon juice in skillet and sauté the mushrooms. Add the cauliflower, garlic, basil, salt, and pepper, stirring well for about 5-6 minutes.
Add the cooked brown rice and cheddar cheese to the sautéed mixture, mixing well.
Move the mixture to a casserole dish, cover, and bake for 30 minutes.
