1/4 cup packed brown sugar
1 tablespoon granulated sugar
1/4 teaspoon cinnamon, ground
2 medium ripe bananas, unpeeled
3 tablespoons fresh lime juice
1 tablespoon butter
1/4 cup dark rum
2 cups vanilla fat-free frozen yogurt
1/2 cup pineapple curd (prepared ahead of time)
In a medium bowl, mix the brown sugar, granulated sugar, and cinnamon.
Peel the bananas, and cut each in half lengthwise. Then slice each banana half into four pieces by cutting across the width of the banana. Coat the bananas with the lime juice, and dip them into the brown sugar mixture, coating the bananas completely.
In a large nonstick skillet, melt the butter over medium-high heat. Place the bananas into the melted butter and cook for 2 minutes, flipping the bananas after 1 minute. Once cooked, remove the bananas from the heat, but leave them in the skillet.
Pour the rum into the skillet with the bananas. Carefully light with a long match or lighter, and allow the flames to die down.
Scoop equal portions of frozen yogurt onto four dessert dishes. Cover the frozen yogurt with 4 banana pieces and 2 tablespoons of pineapple curd. Serve immediately.
