2 pounds (about 5 cups) red potatoes, cut into 1/8-inch-thick slices
8 slices bacon, cut into 1/2-inch pieces
1/3 cup apple cider vinegar
2 1/2 teaspoons sugar
3/4 teaspoon salt
1/4 teaspoon black pepper
1/2 cup onion, finely chopped
1/4 cup red bell pepper, finely chopped
1/4 cup fresh parsley, finely chopped
Add the potatoes to a large pot and cover. Steam until tender (about 10 minutes).
In a large nonstick skillet, cook the bacon until crisp. Set aside 2 teaspoons of bacon drippings.
In a large bowl, whisk the bacon drippings, vinegar, sugar, salt, and black pepper. Add the potatoes, onion, and bell pepper to large bowl and gently toss until well coated. Cover the bowl, and allow the potato mixture to marinade for one hour.
Just before serving, add bacon and parsley. Mix gently and serve.
