2 teaspoons olive oil
1/2 small red onion, chopped
2 teaspoons fresh thyme, minced
4 boneless skinless chicken breasts, cut in half
1/3 cup sugar free blackberry jam
1 tablespoon balsamic vinegar
1/2 teaspoon salt
1/2 teaspoon pepper
In a medium skillet, heat olive oil over medium. Add onion and thyme and cook for 5 minutes. Remove and set aside.
Place chicken in the frying pan and cook for 7 minutes on each side until browned. Add onion and thyme mixture and stir.
Add jam, vinegar, salt, and pepper and cook until the jam melts.
Cover the skillet, reduce heat, and simmer until the chicken is thoroughly cooked.
