Ingredients

  • 1 cup dry lentils

  • 2 14 ounce cans diced tomatoes

  • 4 cups water

  • 2 garlic cloves

  • Dash of curry powder

  • Dash of salt

Directions

  • Add all ingredients except the curry powder and salt to a stock pot and stir.

  • Bring the mixture to a boil then lower to a simmer for approximately 20-30 minutes.

  • Remove the pot from heat when lentils are soft. Season with curry powder and salt.
