2 cups coarsely chopped zucchini
1 1/2 cups coarsely chopped onions
1 red bell pepper, coarsely chopped
1 pound extra lean ground turkey
1/2 cup uncooked couscous
1 egg
2 tablespoons Worcestershire sauce
1 tablespoon Dijon mustard
1/2 cup barbecue sauce
Preheat an oven to 400°F and grease a muffin pan.
In a large bowl, combine the chopped zucchini, onions, and bell pepper with the ground turkey, uncooked couscous, egg, Worcestershire sauce, and Dijon mustard, mixing well.
Fill the muffin cups 3/4 full with the turkey mixture. Top each cup with 1 teaspoon of barbeque sauce.
Bake for 25 minutes or until the internal temperature of each meatloaf is at least 160°F.
