1 20-ounce box of chocolatebrownie mix
2 eggs
1 egg yolk
1/4 cup low-fat mayonnaise
1/2 cup unsalted butter, melted
Preheat an oven to 400⁰F. Generously coat a 24-cup mini muffin pan with cooking spray.
Place the brownie mix in a large bowl. In a separate small bowl, beat the eggs, egg yolk, and mayonnaise with an electric mixer for 2 minutes.
Add the egg mixture and butter to the brownie mix and stir.
Spoon the batter into the muffin pan, filling each cup to the top. Bake for 10 minutes or until the top surface is cooked and the inside is still soft.
Remove from pan and serve.
