4 cups cherries
1/4 cup water
1/3 cup sugar
Preheat an oven to 170 degrees F.
Prepare two baking sheets with parchment paper.
Remove the pits and stems from the cherries.
Place the cherries and water in a large saucepan. Bring to a low boil and reduce the cherries. Stir frequently.
Transfer to a food processor and blend until smooth. Return the mixture to the pan and add the sugar. Cook until the mixture thickens, about 10 minutes.
Spread the mixture between the two prepared baking pans.
Bake in the oven for 5 hours, rotating the pans every hour, until slightly sticky.
When cool, flip the pan onto a cutting board and removing the paper.
Cut the leather into long strips. Fruit leather keeps best in an airtight container.
