6 lean center-cut pork chops, 1/2 inch thick
1 egg white
1 cup evaporated skim milk
3/4 cup corn cereal crumbs
1/4 cup fine dry bread crumbs
4 teaspoons paprika
2 teaspoons oregano
3/4 teaspoon chili powder
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
1/8 teaspoon cayenne pepper
1/8 teaspoon dry mustard
1/2 teaspoon salt as needed

Preheat the oven to 375°F.
Remove all of the fat from the pork chops.
Whisk the egg white and the milk together. Put the pork chops in the milk mixture, and allow them to marinate for 5 minutes, turning the pork chops once after approximately 2 minutes.
In the mean time, combine the bread and cornflake crumbs, the spices, and the salt into a medium size bowl.
Use the cooking spray to coat a 9x13 inch baking pan.
After removing the pork chops from the milk mixture, thoroughly coat the meat with the crumb mixture.
Put the breaded pork chops into the baking pan and place the pan in the oven for 20 minutes. After 20 minutes, carefully flip the pork chops, then bake for another 15 minutes or until there are no pink parts remaining. Serve immediately.
