1 and 1/2 pounds potatoes
2 medium avocados
1 tablespoon margarine
1/2 cup nonfat milk
1 dash lemon juice
Salt, black pepper, and garlic powder to taste
For preparation of the potatoes, peel the skin, rinse with water, and then place all of them in a large cooking vessel with just enough cold water to submerge them.
For preparation of the avocados, remove the pit and scoop the flesh out of the skin into a bowl with the lemon juice. Stir until well blended.
Place measured amounts of milk and margarine in a bowl and microwave just enough to be melted.
Cook the potatoes over medium heat for about 25 minutes.
Place the softened potatoes into a large bowl and mix either by hand or with a mixer.
Mix the margarine spread and milk mixture slowly into the potato mash.
Mash the potatoes to individual taste and add in the avocado mixture.
