Cooking spray
1 can whole water chestnuts, drained and rinsed
1 small zucchini, peeled and sliced into thin ribbons
3 slices of Canadian bacon, sliced into 1/2 inch wide strips
1 tablespoon and 1 teaspoon barbecue sauce
Preheat an oven to 375 degrees F.
Coat a baking sheet with cooking spray.
Place a zucchini slice on the baking sheet, layering a strip of the Canadian bacon over it, and spread about ¼ teaspoon of barbecue sauce on top. Finally, place the water chestnut at one end of the strip, rolling the zucchini and bacon around it. Secure with a toothpick.
Repeat until all ingredients are used.
When they are all rolled and secure, place in the oven for 10 minutes or until the bottom of the chestnut is browned.
