15 large eggs, beaten
1 green bell pepper
1 cup shredded cheddar cheese, low fat if possible
1/4 cup feta cheese, optional
Garlic powder to taste
Preheat an oven to 375 degrees F.
Spray a muffin pan with a non-stick or use liners.
Dice the bell pepper and season to taste with garlic powder.
Combine the egg and vegetable-garlic mixture and carefully pour into the muffin tins until it fills 2/3 of the space.
