1 1/2 lbs small red potatoes, cubed, unpeeled
1 teaspoon olive oil
1 medium onion , chopped
1 teaspoon dried thyme
1 teaspoon dried basil
1/2 teaspoon dried oregano
Add the potatoes to a large pot of water over medium heat. Bring to a boil and simmer until tender, about 15 minutes. Drain and set aside.
In a small saucepan, sauté the onion in the oil until tender. Mix in the potatoes and all herbs.
Serve warm or at room temperature.
